Now a days, I am super duper busy so am hardly getting time to upload new recipes. I am busy with shopping ,outing and of course not to forget I have a kid too.
Trying all means and method to do shortcut cooking. Todays recipe is one of the simplest one with minimal ingredients.
INGREDIENTS
1.2. Eggplants (the slender ones)
2. 2 Tablespoon Vinegar (or as desired)
3. 2 Tablespoon Soya Sauce (or as desired)
4.Coriander leaves (few)
5.Red chillis (3 chopped).
6.Oil.
DIRECTIONS
1.In a pan take oil.
2.Fry the eggplants (chopped into square pieces)
3. Once fried put them on tissue paper so that excess oil is removed.
4.Put the eggplants in a bowl ,add soya sauce,vinegar,chilli and coriander leaves and mix lightly.
5. Serve.

Eggplant is one of my favorite vegetables, I would eat it steamed, roasted, stir fried, in soups… thank u for sharing this recipe 🙂
