This recipes is from Yummy magazine…its one of my favorite magazines in Philippines. I am so addicted to this magazine that I never miss even a single issue and one thing for sure I will miss when I move back to India is this magazine.
It’s a typical Pinoy dessert and pineapple adds extra tang to it.
INGREDIENTS
1.Can crushed pineapple (including syrup) 500 gm.
2.Brown Sugar 1 cup.
3.3 Cups desiccated Coconut
4.3 Egg whites
5.1/2 Teaspoon Vanila Extract
DIRECTIONS
1.Place can crushed pineapple and sugar in a pan and stir over low heat.Let the syrup get evaporated and caramelize pineapple.
2. Transfer it to a mixing bowl and add coconut,egg white.vanila and mix.
4.Scoop the mixture and drop on a lightly greased baking sheet( 1 inch in between each scoop).
5.Bake in a preheated oven (350 degree) for 13-15 mins
Cool and serve.It will make around 30 pieces.
