Family bonding activities don’t have to be expensive to be fun. You don’t  have to spend tons of money going on a trip out-of-town or watch movies or shop at the mall. Your family can have more fun spending quality time at home on a weekend while enjoying some of the simple things of life.

You can watch a great movie on TV and huddle close together on the couch or spread blankets on the floor and play some exciting games.Or you can enjoy the fun of cooking together a simple cake.

One such cake that I make usually on weekends with my family is Lemon cake

Lemon Cake


Butter – 125 gm

Caster Sugar – 175 gm

Eggs – 2large

Self-raising flour – 175 gm

Granulated Sugar – 50 gm

Lemons – 2.


Lightly oil and line the base of an 18 cm/7 inch square cake tin with baking paper

In a  bowl, mix  butter and sugar together until soft and creamy.

In another bowl beat the eggs.

Keep adding egg and the flour  to the creamy mixture slowly.

Finely grate the rind from one of the lemons and stir into the creamed mixture, beating well until smooth.

Squeeze the juice from one lemon, strain, then stir into the mixture

Put the mixture in the baking tray and bake for 30 minutes (  preheated  oven).

Squeeze the juice of the second lemon into a saucepan. Add the rest of the sugar to the lemon juice and heat gently, stirring occasionally till sugar is dissolved.

Make small holes with a tooth prick on the cake and pour the prepared syrup.
