Carrot Cupcake

 

Today’s recipe  is on a special request from a very special person in my life and that special person is no one but  my son.

My son was watching his cartoon program on Disney Channel  and it mentioned cup cake and there his music started , “I want I want cupcakes……..”. I had no option but to make  for him at 10 pm. Hahah you can find him in the first photo taking my cupcake while i was trying to click some photos….had to give up finally and not click anymore.

As my thoughts raced on the flavor  , I remembered a good friend of mine, “Anjali ” who suggest me to make carrot cakes. Hence i decided to go for it.

 

Few of the ingredients

 

 

INGREDIENTS

1. 3 Cups grated carrot.

2.2 Cup all-purpose flour

3. 2 Cup Sugar

4. 1 Cup olive oil

5. 4  Eggs

6.1 teaspoon baking powder

7.1 teaspoon baking soda

8.Few cashew nuts/raisins (optional) or 1 teaspoon cinnamon powder.

9. Cup cake paper liners.

 

Cupcake pans fitted with paper liners and filled with the prepared mixture

 

 

DIRECTION

1.Preheat oven at 350 degree C.

2.Mix all the ingredients one by one.

3.Put equal amount in a greased cupcake mould fitted with paper liners.

4.Bake for 20-25 mins ( To test insert a tooth prick/pin, if it comes clear then the cupcake is ready for you to eat :-))

5.Let it cool and you are done 🙂
